2 large chicken breasts sliced into cubes

1/2 cup of flour

1/2 tsp each of salt, pepper, paprika, and  garlic powder

2 TBSP olive oil

2 TBSP butter

2 TBSP of minced garlic

1 cup of chicken broth

1 cup of heavy cream

1 cup of Parmesan cheese

1 tsp of red pepper flakes

1/2 tsp each of oregano and thyme

1/3 cup of chopped sun-dried tomatoes

1 19-oz bag of frozen tortellini

How to Make Marry Me Chicken Tortellini

Prep the Chicken   

 Slice 2 large chicken breasts into small cubes. In a bowl (or Better Breader Bowl), mix ½ cup flour, ½ teaspoon salt, pepper, paprika, and garlic powder. Coat the chicken in the flour mixture and shake off any excess.

Heat 2 tablespoons olive oil and 2 tablespoons butter in a skillet over medium heat. Cook chicken for 4-5 minutes each side until golden brown and cooked through (internal temp 165º). Set aside on a plate.

3.Make the Sauce 

In the same skillet, sauté minced garlic, ⅓ cup chopped sun-dried tomatoes, and a bit of shallot for about 3 minutes, until soft and fragrant. Add a pinch of red pepper flakes and a touch of tomato paste, then stir in 1 cup chicken broth and use a spatula to scrape up the bits on the bottom.

4.Creamy Base

Lower heat and add 1 cup heavy cream, 1 cup parmesan cheese, ½ teaspoon oregano, and ½ teaspoon thyme. Stir frequently and let it simmer gently.

5.Cook the Tortellini

Stir in a 19 oz bag frozen tortellini, cover, and cook for a few minutes until tender. Stir halfway through to cook evenly.

6.Finish the Dish  

Return chicken to the skillet and add spinach if desired. Stir everything until coated in the delicious, creamy sauce. Serve hot topped with fresh basil, extra parmesan, and a dash of freshly cracked black pepper. It’s beyond good!
